
About Our Bakery
Cottontail Breads is a home cottage microbakery registered as a NY state home food processor located in Lake Ronkonkoma, Suffolk County. As a baker, I am self taught. Baking artisanal style breads (commonly known as sourdough) started as a hobby. It has become a passion focusing on producing naturally leavened breads using wild yeast cultivated from organic raisins. Owning a microbakery to serve my community has been long in the imagination and dreams but is now wonderfully realized. We hope to share our passion with the community and for the community to discover our healthy, delicious, and artisanally crafted breads.
Our Breads
Cottontail breads are naturally leavened with wild yeast cultvated from organic raisins. As much as possible, we will source flours and ingredients that are organic and locally produced. The breads will vary from lean, hard breads such as your classic pain de campagne or country loaf to soft enriched breads such as Japanese Hokkaido style milk breads known as shokupan , the French brioche, and Filipino bread rolls known as pandesal. We will also offer breads reflective of seasonal changes and in celebration of the Holidays. In the future and as the business grows, we hope to offer more varieties of breads for the enjoyment of customers.
